Why do you want to jailbreak the phone, it will give you access to the OS so that you can install third party apps. But if you want to change sim then you should avail unlock. If you get unlock from a authentic service like your network provider or third party unlockers like unBBlock.com then there would not be any problem in utilising the features of the phone/network.
