So I have research that if I get an unlocked iphone I cant upgrade it because it will go back being locked. Does this mean I cant use itunes?

An iPhone would get locked back after an update only if the previous unlocking method was a temporary one. If you do a permanent unlock for an iPhone it wont get locked back.
