I use a four light classic system on most of my portraits. Main, fill, hair and background. All strobes.

Yes, flash units are used, up to 4 depending on look and what I am wanting to do.
"Sometimes" the dinky one on the camera is also employed, but this is usually just to trigger the others.

of course, always off camera and sometimes multiple flash units

Indoors, I like to use a bounce flash, not so harsh. Outdoors, I just find the right lighting. But that's just me.
