He's 20 years old and we live in nyc. He rides single speed or fixed gear or something like that (I don't know much about bikes) I'm already getting him some new bike shoes, but I'm having trouble thinking of other things.

How about some top of the range colour co-ordinating tyres - that's 'color co-ordinating tires' to you:-)
Top quality tyres make quite a big difference to the performance of a bike and there are some very stylish ones on the market these days. Be careful about the size though.
In no particular order:
DeFeet wool socks. (they come in both summer and winter weight)
Cycling gloves. (every rider goes through gloves)
Cycling sunglasses.
Blackburn Flea rear LED tail light. (the smallest, brightest, lightest, and rechargeable)
Pearl Izumi shorts or bibs.
Gift card at your local bike shop. (you know the one - his favorite)
A ding dong bell. (just to be silly)
Shoes are good, jerseys are good, gloves ('specially this time of year!), balaclava, tights, rain gear, Under Armor.....
Cycling is even better than golf for those seeking to give gifts.
I'm asking Santa for new pedals because all four or five sets I have are pretty much worn out.
Shoes is a perfect idea. You could get him a helmet depending on the one he has he might want to upgrade. Maybe he would want a jersey from his favorite team. You could get him some gloves or if he likes fixing bikes he would like a Park Tool multi tool kit. Because of the time of year he might want arm and/or leg warmers . Hope this helps.
Go to velogear.com for some cool ideas for you urban neo-hipster doofus types ;-)
You should have no problem finding some cool stuff, there...hats, shirts, etc. Hats are way cool, as are the wool training sweaters.
