It has been mentioned elsewhere, but this seems like the perfect place to mention it again. Some dish arms are the right length for a single LNBF by itself (directly on the end of the arm), and some are the right length for the Y-adapter than holds the LNBFs (an inch or two further out). Everyone knows about focusing - right? So just be aware of what you're doing when you mix and match bits and pieces.
Price check - local dealer sells 30" dishes for about $80.
There is more to it than just focusing but you are right. You cannot put a Y adapter from a 20" dish on any other dish and expect it to work. Adapters are available to use more than one LNB with a single LNB dish but it can take quite a bit of tweaking to get good results. It is better to buy the right dish and LNB for the job in the first place.

If you order a DirectTV dish, you need to buy the LNB's. The DTV uses a square mount (instead of the Dish Network 1/2 moon mount). You can put DTV LNB's on a Dish arm, but not the other way around.

How did that Winegard 30" work out? I get rain fade on my 20" Dual LNBF. Can I just order that 30" dish from 21st Century and mount my Dual LNBF's on it for Nimiq 1 and 2?
No, the Winegard dish is a single sat dish. I left the 20" BEV dish up for sat 91.
The 30" Winegard has performed flawlessly even last week in 96kph winds and heavy-heavy rain, I've never lost signal . I posted the signal strengths I was getting shortly after I installed it, lowest transponder was 95, most in the 97-99 range and 5 or 6 were 100.
All I can say is if you have the room for the two dishes, and dont mind the way it looks, go for it! You wont be dissapointed!
