He means that because she's had so many kids, he's glad she's dead and can't have anymore. Legs closed = no more babies, even though she's dead. (her legs are together, as in next to one another)
The term "keep your legs closed" means that you don't have sex. Because she had so many husbands and so many children, she didn't keep her legs closed. So, now that she is dead, she can't have sex. When the priest says finally her legs are closed, he is talking about how she isn't going to have sex anymore because she is dead.
Its a dirty joke the woman had so many kids she never kept her legs closed or together now that she died her legs are finally together(closed)
basically she has so many children that the priest meant thank god her legs are together cause........she cant have anymore kids
