It all depends on the rider as much as the bike. In major races such as the Tour de France, the top riders will average about 25mph (40kph) over the course of a 5-6 hour stage. Sprinters will routinely exceed 40mph in the race for the line. Riders often reach 60+ mph on decsents in the mountains.
For us mere mortals, I can maintain about 20-22mph on flat ground and average about 18 mph after factoring in the hills. There is one downhill stretch that I've touched 50mph a few times.
