Riddle wanted to know about Merryweather because he wanted the Defence job after he left school. He asked Dippet but Dumbledore convinced him not to give Riddle the job. Riddle then came back a few years later when Dumbledore was head and asked for the job again but Dumbledore refused.

I assume that the person can still remember the event when the memory is removed but removing them allows him/her to relive them with all the detail.
