All of our local Mexican restaurants grate a super melty cheese over just about everything and it's insanely delicious. What is it? It's very mild in flavor almost like the cheese used to make string cheese.
I've been told it's the exact same cheese they use to make their white cheese dip and that they just add a little whole milk to the dip to make it a little creamier. It's pretty much an all white cheese and when I say this stuff is creamy I mean it.
I've never seen a cheese that melts as easily as this stuff. One of the waiters once told me they use Monterrey Jack, but I've had Monterrey Jack before and it has a different flavor and is not nearly as meltable. This is driving me crazy. I've got to know what kind of cheese they are grating over everything.
