No, it isn't of course a necessity, but per Kafka, I used it to make dark
roux very successfully. You never burn one and have to start over. I also
made caramelized sugar without problems.
That said, when I was in the US this winter I used them only for heating
things up. You have to think about these things when you aren't used to
them.

I have only one but it also has a convection oven and a grill, so it gets
used a lot. I am now mostly cooking just for us two and it is often big
enough. I do use the nuke part quite a lot too, for defrosting food and
warming things as well as cooking as you describe above.
