Before I say anything...I have a fast metabolism and I take a crap 1-3 times daily, and family members call me a skeleton, so olive oil isn't an issue for me.

Obviously a lot of good stuff is lost when cooking, but I'll buy a pressure cooker soon so those things aren't lost. So other than that...

What else is there? My mom said cooked potatoes have cholesterol or something like that, but how and why does this happen? I never did research on this. Anything else I should know?

What changes undergo when you boil oils, should I just bake potatoes instead?
